French Toast Cups Stuffed with Cottage Cheese and Fruit Recipe

Perfect for a leisurely Sunday breakfast, these French toast "cups" are made of whole grain breads, and contain a creamy, sweet, fruity filling so you can nix the syrup.

You Will Need:
Nonstick cooking spray
8 slices 100% whole wheat bread
1 large egg
2 egg whites
1/4 cup skim milk
1/2 tsp vanilla
1 tsp cinnamon
1/4 tsp freshly grated nutmeg
3/4 cup low-fat cottage cheese
2 packets artificial sweetener
3 tbsp. spreadable fruit, no sugar added (choose your favorite flavor)

Instructions:
Spray a muffin tin with the nonstick cooking spray. Preheat the oven to 375.
Cut the crusts off the bread.
Whisk together the eggs, egg whites, skim milk, vanilla, cinnamon and nutmeg.
Dip a slice of bread in the egg mixture (both sides) and press it into the muffin pan gently to create a small bread cup. Repeat this with each slice of bread.
Bake the toast cups for 12 to 15 minutes, till crisp.
Whisk together cottage cheese, sweetener and fruit spread. When ready to serve, place 2 French toast cups onto a plate and add 1 heaping tablespoon of the cottage cheese filling.
Makes 4 servings.
