Yummy Ginger-Chicken Lettuce Wraps

Lettuce wraps are a great alternative to tortillas or sandwich bread. You cut out lots of carbs without cutting down on taste. These Asian inspired wraps feature chicken and ginger. When measuring out the salad dressing, keep a little extra on the side for dipping. Yummy!
Makes 4 servings

Ingredients
2 cups cooked chicken breast, finely chopped
2 cups shredded cabbage with carrot (coleslaw mix)
½ cup carrot, finely chopped (1 medium)
¼ cup chopped green onions (2)
2 Tbsp. chopped unsalted dry-roasted peanuts
1 tsp. fresh ginger, grated
1/3 cup bottled Asian salad dressing
1/3 cup canned crushed pineapple, drained
12 leaves Boston, Bibb, or green leaf lettuce

Directions
1. Combine the following in a large bowl: chicken, cabbage mix, carrot, green onions, peanuts, ginger. Pour salad dressing onto mixture and add pineapple; stir well.
2. Take approximately ¼ cup of the mixture and spoon onto lettuce leaves. Fold opposite sides of leaves together, and then roll up. Secure with a large toothpick.
